I got home from work last night... wait. Let me back up. I was on "hiatus" from a job I thought was going to last for much longer than it did, but well, they did bring me back on so I'm very grateful for that little miracle... Anyway, yesterday was the first day back after three weeks off. It's always shocking to me how busy your day really is when you AREN'T working? How the hell do we get this all done when we are somewhere else for 8, 9, 10, 16 hours a day? Holy cow pie! But, yes... we do.
So, back to it. I got home and well, to say things are tight may be an understatement but I'm standing my ground, being very creative with my financing for now and gettin' it done! It brought me back to when I was living in a basement apartment in the Forest Hill area of Toronto...
...very upscale neighborhood... lovely homes and super close to the subway.
We've all been there... you ask yourself when you get off the tube, "Do I take a cab because it's raining or, do I suck it up and walk home with no umbrella, in the same pair of shoes I've had for 5 years?"
Ahhhh... the choices we make. That said, I walk in the door last night and I have three very happy, furry faces speaking in different dog languages to me.
Then I think... hmmmm, I've had a granola bar and two diet Cokes today... probably need something else. I literally was pulled back to those days in that little apartment as I was looking in my fridge, my freezer, my pantry... hmmm, what can I make with this?
Imagination has always been a strength... perhaps because our Mother always thought that the Wizard of Oz was shot on location...
...and I'm not kidding when I tell you that; it's true and my Brother and Sister and I all remember the day and looked at each other in complete amazement. Almost like we had just seen Santa Claus having a Mai Tai at a swim up bar at a Club Med. Crazy.
I tell you this story so have a clear understanding that you have a wealth of deeeeeeeliciousness in your very own kitchen. You just have to have an appreciation for what you already have and not what you want. Kinda sounds like a life coach thing, but well... whatever... here's what I came up with... and you KNOW it's deeeeeeeelish!

Fridge and Pantry Dinner
1 bunch asparagus, chopped
three medium tomatoes, diced
1 large portabella mushroom, chopped
Couscous (enough for two, follow the directions on the box)
1/4 stick unsalted butter
3 tbsp Extra Virgin Olive Oil
Juice of one lemon
Salt and pepper to taste
Melt the butter with the olive oil in a medium sauce pan.
Add asparagus and cook for 4 minutes over medium heat. Add the chopped mushroom and toss with the cooked asparagus. Continue to cook for another 3 to 4 minutes.
Add salt and pepper and stir in the tomatoes. Cook until the tomatoes are heated through (about 5 minutes more).
Remove from heat and squeeze the juice of a whole lemon over the vegetables. Serve hot over cooked couscous.
The flavors of each ingredient are incredibly bright and super wicked deeeelish.
Enjoy!
