You Should Be Grilling Everything!

I was listening to a very wise man at work today, telling me his trials and tribulations of smoking ribs over the weekend.

He loves to cook and appreciates everything that I bring in for work-folks to enjoy.  After our conversation I realized I should have asked him for his beans and BBQ Sauce recipe... (putting that on the list for tomorrow).  I adore men who cook...and not just grill but really cook.

They get into the science of it.  I, first and foremost, am a baker and that in it's simplest form is chemistry.  From day one really.

I remember my first summer job, a bake shop in Wasaga Beach (long gone now)... no A/C, Central Ontario Canada summer's with humidity that would choke a goat.  My job was to make Rum Balls.  From 7:15am to 5pm, make...rum...balls.

To this day, I can't look at a rum ball.  The added bonus to this "summer job" (where I was paid $2.15 and hour) were the huge picture windows at the front of the shop where I could see all my friends driving by on their way to P1.

(those of you who are reading this and are familiar with the Lorna Doone and all the Beaches at Wasaga, well, you know what I'm talking about.)

It. Was. Torture.

But, I digress.  As I was listening this wise man talk about BBQ and smoking ribs, I started thinking about all the things that you could and CAN grill.  Lord knows summer here in Shadow Hills, the grill is your only friend when dinner time comes-a-callin'!

Grilled pineapple... that's a given.  Grilled watermelon skewers... seen it a few times. Strawberry, cantaloupe, cherry tomato (remember, tomatoes are a fruit), apricots, kiwi, the list goes on.

One of my favorites though and will always be, grilled peaches.

It's peach season here and that lasts till around the end of August if yer lucky.  Seriously, a little sugar and balsamic, through them halved and pitted on the grill.. BOOM, Bob's your Uncle.

No, seriously... Robert is your Mother's Brother on this one!

Here's a super quick, yummy Sunflower recipe for grilled peaches and chicken Scallopini... (Sal, you gotta put this on you summer menu!)

Whatcha Need:

Chicken:

1 pound boneless skinless chicken
breasts (pound the snot out of it... the thinner the better)

Salt and freshly ground pepper

¼ cup almond or rice
flour

2 tablespoons canola oil

Peaches:

¼ teaspoon ground ginger

½ teaspoon ground cinnamon

4 teaspoons honey

6 large yellow peaches, pitted and
halved

How You Do It:
Heat grill to medium-high. Brush the chicken with 1 tablespoon of the oil and season with ½ teaspoon each salt and pepper.
Step 2
In a bowl toss  peaches, 1 tablespoon of the oil, and ¼ teaspoon each salt and pepper, ginger, cinnamon, honey

Step 3
Grill the chicken it is cooked through... 5 to 6 minutes per side. Grill the peaches until charred, 2 minutes per side (delicious).
Plate it all up, give a random squeeze of fresh lemon (why not?)
Enjoy!
With Love from The Sunflower

Summer comes 'round again.

As the evenings get warmer and the crickets song helps even the busiest of brains lull off to dreamland, I realize that it's summer, again. We barely had a winter here on the mountain and spring was about two full weeks, maybe.  Gardens are taking hold and my zuch plants are soon to overtake everything else in a matter of days. Summer to me means grilling pretty much everything, every day to keep the heat out of the kitchen. Working in the shop kitchen for hours on end this time of year is not just exhausting but dehydrating! What are some of your favorite things to grill?  Do you prefer marinates or dry rubs?  Do you wrap your baked potatoes in foil on the grill or just plop them directly on the grill (well olive oiled of course)? Then there are the summer desserts... fresh berries, stone fruit, homemade ice cream.  One of my go to sweet treats is this peach and citrus sour cream cake.  (recipe at the end of this entry). Of course the star of easy summertime fo...

The Winter Blues

There's that weird period of time between January 1st and Valentine's Day I will classify as "The Winter Blues".  You're still recovering from the holiday rush and have that "I've forgotten something" feeling in the back of your mind, daily, since you aren't going somewhere for a party, preparing for a party or cleaning up after a party. The reality is, you have no deadlines and no one is dropping by at 7AM to pick up that Chocolate Peppermint Torte for their New Year's Eve celebration.  It's quiet.   Rainy (and or snow depending on where you live). The vibrant colors of the holidays, the reds, the golds, the greens have all faded to a light greyish-blue. How do I beat the Winter Blues you might be asking yourself?  I cook things that make ME happy (potato tacos).  This is the time of year I do most of my recipe testing for upcoming cooking demonstrations or private classes I teach.  Most will show up in the next co...

Summer 2017... It's A Wrap!

Although it's topping 114ºF here in Shadow Hills, CA over this long, last-kick-at-Summer holiday weekend, I can't help wishing for that first sign of Fall.  Snuggly sweaters, big fuzzy socks, heavily spiked Hot Cocoa... mmmm, I can just taste it! When we were kids, the end of Summer was always marked by the Jerry Lewis Telethon (was it possible to stay up all night?), shopping for the last bits of things needed to start the new school year and one final Cook Out before Dad would cover up the grill and wheel it back into the garage until next Summer. There were always people visiting at one time or another over Labor Day weekend.  Friends coming back from Holiday up in Cottage Country would stop in, knowing full well the grill would be fired up, ice cold beer in the cooler and that final cannon ball into the pool before they head back to their respective homes in the City.    Man, I think back and smile. Remembering. SNAP OUT OF IT J...
