Best Taco on the Planet! (okay, maybe L.A. County.)...



I know what you’re thinking… what could a Canadian possibly know about
tacos? Crazy, right?

Well, let me tell you… I’ve had tacos pretty much everywhere, from a food
truck in Sunland on Glenoaks and Sunland Blvd to the deliciously simple tacos
I had out of a vendor cart in Puerto Morelos, Mexico with Agent E, (more on
Agent E as we all get to know each other..)

Some of the BEST tacos, even if I do say so myself (without the hazy aid of
our pal Jose Cuervo) are the tacos I make at home after a VERY busy day
creating TV magic… all I want is chicken, cilantro, fresh garden tomatoes,
some lime, a little cool lettuce and hot sauce all hiding in a heated, hard shell
taco… yep, that’s pretty much the only way to end days like those ones, right?

Here we go…
On medium, heat a sauce pan with 4 tbsp olive oil and add half a chopped red
onion, 2 cloves crushed garlic, the green end (chopped) of a bunch of
scallions, about a 1/4cup of loosely chopped fresh cilantro, 1/4 cup dry
vermouth (I know, delicious!), 1/8 tsp ground thyme, 10 cherry tomatoes (cut in
half) a dash of salt and dash of black pepper… push it all around the pan for
about 4 minutes… you’ll start to smell all the flavors around that time, (sure,
could have said “aromas” but I think it’s over used and since the senses of
taste and smell are so closely related, I prefer to “smell flavor”…moving on…).
So, where were we… oh yes, we were “smelling the flavors” and about to add
two chicken breasts (skinned and boned…stop it Becca… yes, I said boned)
cut into 1” cubes to the pan with onion mixture till cooked… about 10 minutes.
Cooking time will vary depending on the type of stove top you are using, so
check to be sure the chicken is cooked through; no pink! Turn stove off and
let the chicken mixture cool slightly.

In the meantime, make ready your favorite taco fixin’s… fresh chopped
cilantro, diced tomatoes, sour cream, maybe some shredded cheddar,
chopped iceberg lettuce and HOT SAUCE! Heat up taco shells or tortillas in
the mirco-wave for :30 seconds (if you have a gas stove top and are skilled at
heating over an open flame by flipping the tortillas with metal tongs, you can
use that method, but only if you are SKILLED AT IT, we don’t want any
accidents).

Fill the heated taco shells/ tortillas with all the deliciousness above and enjoy
the best taco on the planet!

Summer comes 'round again.

As the evenings get warmer and the crickets song helps even the busiest of brains lull off to dreamland, I realize that it's summer, again. The Winter Blues

There's that weird period of time between January 1st and Valentine's Day I will classify as "The Winter Blues".  You're still recovering from the holiday rush and have that "I've forgotten something" feeling in the back of your mind, daily, since you aren't going somewhere for a party, preparing for a party or cleaning up after a party. Summer 2017... It's A Wrap!

Although it's topping 114ºF here in Shadow Hills, CA over this long, last-kick-at-Summer holiday weekend, I can't help wishing for that first sign of Fall.  Snuggly sweaters, big fuzzy socks, heavily spiked Hot Cocoa... mmmm, I can just taste it! When we were kids, the end of Summer was always marked by the Jerry Lewis Telethon (was it possible to stay up all night?), shopping for the last bits of things needed to start the new school year and one final Cook Out before Dad would cover up the grill and wheel it back into the garage until next Summer. There were always people visiting at one time or another over Labor Day weekend.  Friends coming back from Holiday up in Cottage Country would stop in, knowing full well the grill would be fired up, ice cold beer in the cooler and that final cannon ball into the pool before they head back to their respective homes in the City.    Man, I think back and smile.
