All I Want To Do Is Bake Pies!

For the past couple of days all I can think about is baking... baking pies, gingersnaps, the chocolate torte then I realized that tomorrow is Canadian Thanksgiving.



It all makes sense now.  It's the same feeling that I get this time of year when it's still about 1000ºF here in Shadow Hills but I have an irrepressible need to get the cashmere sweaters out.  Heck even the horses have started to "wool up" !




Since this is the way it's going to be for the next while I guess I no choice but to embrace the fact that grilling season has been extended.  With that in mind I've put together 4 super yummy dips/ dunking/ or grilling sauces for you to give a try.  Here goes:

Cilantro-lime aioli:
Whisk together 2 tbsp chopped cilantro
1/2 cup mayonnaise (don't use Miracle Whip, use mayonnaise)
Zest 1 lime
3 tsp. lime juice
Great for fish or chicken on the grill or you can use it to dunk sweet potato fries into!

Sweet Chili Sauce:
Whisk together (it's all about the whisk for these btw...) 4 tbsp. hoisin sauce
2 tbsp. chili garlic sauce
2 tbsp. honey
This sauce calls out to pork chops/ tenderloin or a nice filet mignon on the grill.

Malted Pepper Mayonnaise:
Whisk (yep, again) together 1/2 cup mayonnaise
4 tsp. malt vinegar
1/2 tsp. pepper
Of course this is a natural with fish (grilled or baked) or dip big 'ol steak fries into it :o)

3 Cheese Dip (serve warm)
Using a small bowl toss together 1/4 cup each:
shredded asiago, gouda and sharp cheddar cheese.  Transfer cheese to a small saucepan and add 3 tbsp. heavy whipping cream, stirring often and cook over a low heat until cheese has melted and is smooth to stir.  Add 1 tbsp. finely chopped chives.
Good as a side with grilled veggies, or a dip for grilled/toasted focaccia

Summer comes 'round again.

As the evenings get warmer and the crickets song helps even the busiest of brains lull off to dreamland, I realize that it's summer, again. The Winter Blues

There's that weird period of time between January 1st and Valentine's Day I will classify as "The Winter Blues".  You're still recovering from the holiday rush and have that "I've forgotten something" feeling in the back of your mind, daily, since you aren't going somewhere for a party, preparing for a party or cleaning up after a party. The reality is, you have no deadlines and no one is dropping by at 7AM to pick up that Chocolate Peppermint Torte for their New Year's Eve celebration.  It's quiet.   Rainy (and or snow depending on where you live). Summer 2017... It's A Wrap!

Although it's topping 114ºF here in Shadow Hills, CA over this long, last-kick-at-Summer holiday weekend, I can't help wishing for that first sign of Fall.  Snuggly sweaters, big fuzzy socks, heavily spiked Hot Cocoa... mmmm, I can just taste it! When we were kids, the end of Summer was always marked by the Jerry Lewis Telethon (was it possible to stay up all night?), shopping for the last bits of things needed to start the new school year and one final Cook Out before Dad would cover up the grill and wheel it back into the garage until next Summer. There were always people visiting at one time or another over Labor Day weekend.  Friends coming back from Holiday up in Cottage Country would stop in, knowing full well the grill would be fired up, ice cold beer in the cooler and that final cannon ball into the pool before they head back to their respective homes in the City.    Man, I think back and smile.
